Tressa's Tortilla Soup

Who doesn't love a great tortilla soup recipe? This one is easy and it's sure to warm up your insides on a cold winter day. It also supports weight loss, gut health and better energy levels. Bring a batch to a sick friend, make it for the family, or make it just for you and eat on it all week long!
Soup:
1
TBSP olive oil
½
cup yellow onion

medium garlic cloves fresh, chopped or crushed.
1
can ranch style beans (or organic black beans)
½
can Rotel

cans chicken and rice soup
1-2
cups chicken broth
1
can of chicken, or 1 cup chopped and cooked chicken. Sometimes I use
leftovers from a rotisserie chicken
1
TBSP cumin
½
packet taco seasoning
Garnish/serve
with:
-
Tortilla chips
-
Fresh pico de gallo (tomato, onion, cilantro, jalapeno, garlic salt and lime)

chopped avocado

olive oil
Saute
onions in olive oil over medium heat for 3-5 minutes until clear. Add
chopped garlic and saute 1-2 more minutes. Add chicken and separate
chicken chunks with spoon or fork. Add beans, rotel, soup cans, broth
and spices. Stir well and cook over medium high heat until it comes
to a boil. Take it down to medium heat for 15-20 minutes. Serve warm
with chips, pico de gallo, avacado and olive oil. It’s gluten-free, filling
and has lots of healthy fat to support your weight loss goals.
