Paleo Blueberry Muffins


Blueberry Muffins, Muffins, Cupcakes
 

1 1/2 cups almond flour
1 cup oat flour (or any type of bean flour if you are on an anticandida plan)
1/4 cup HEB Organics Zero Calorie Sweetener made with Stevia 
1 1/2 tsp baking powder
1/4 tsp sea salt
1 tablespoon xantham gum
1/3 cup coconut oil 
1/3 cup almond milk
3 large eggs
1/2 tsp vanilla
3/4 cup blueberries

1. Preheat oven to 350 degrees. Line 10-12 cups of a muffin pan with paper muffin cups or spray with oil. 
2. Mix wet ingredients together (coconut oil, almond milk, eggs, vanilla).
3. Mix dry ingredients separately ( almond flour, oat flour, sweetener, xantham gum)baking powder, salt)
4. Mix dry ingredients into the wet ingredients. Fold in blueberries. 
5. Distribute batter into 10-12 muffin cups. 
6. Bake at 350 degrees for 20-25 minutes.
