Paleo Greek Salad

Greek salad is a family favorite for us. I've made it for birthdy parties and when family is in town. It's definitely a good summer go-to meal idea.  I had worked (a very long time ago) at Pappadeaux, and that's how I learned how to make it. This is based on memory as well as a little trial and error.  Add croutons or eat with a toasted slice of ezekiel bread if you are in your bread eating era like me. For a more paleo experience, have a small side of quinoa with it. 


Paleo Greek Salad

1-2 heads romaine lettuce, chopped or sliced
1 large tomato
1 large cucumber
1 red bell pepper
1 small jar of capers
1/2 cup feta cheese
1 large lemon, cut in half 
1 tsp oregano
1 TBSP olive oil
salt and pepper to taste
6-8 ounces grilled or sauteed chicken (or shrimp) in one inch chunks. 

Chop all veggies and add to a large bowl. Take the seeds out of the lemon. Squeeze lemon over the veggies. Add olive oil, oregano and all of the capers. Also add the feta. Mix with large tongs. Top with chicken (or shrimp) and enjoy!
