BEST Gluten and Dairy Free Apple Pie

I've made a lot of gluten and dairy free desserts, and I usually don't post them, but this one was just too good not to share. My daughter and I made this Apple Pie recipe on a whim, wanting REAL apple pie, but happily settling for the gluten and dairy free version since it would not make us sick. Then, it happened. We realized that THIS apple pie was even better. It's our new "real" apple pie!

I'm sorry this picture is only half the pie. It was that good!!


Crust.

1 cup almond flour
1/2 cup brown rice flour
1 cup coconut flour
2 tsp xantham gum
1/2 tsp salt
1/2 tsp aluminum free baking powder
1 cup oil or dairy free butter like Earth Balance. I used half grape seed oil and half olive oil, and it turned out amazing.

1. Whisk together dry ingredients in a medium bowl. Preheat oven to 450 degrees.
2. Add oil and mix
3. Press half of mixture into bottom of pie pan.
4. Set aside remaining mixture.

Filling.

5-6 large, peeled apples
3/4 cup sugar
1 tsp cinnamon

1. Wash, dry, peel and thin slice 5-6 apples. Granny smith will work best, but I used Gala and it turned out great.
2. Combine sugar and cinnamon. Use more sugar for a more tart apple, like Granny Smith.
3. Layer a thin layer of apples, then sprinkle sugar and cinnamon. Repeat until the pie pan is full. Mix in the rest of the sugar and cinnamon into the remaining mixture of pie crust. Crumble the rest of the crust mix evenly onto the top of the pie.
4. Place pie on lowest oven rack at 450 degrees for 10 minutes. Lower heat to 350 degrees and cook for 25-30 more minutes. Cover top with foil for the last 10 minutes if it looks like the crumble is darkening too much.

Let sit for 20 minutes before cutting it. I served it with coconut whipped cream from Wal-Mart, and it was SOOOOO good! Enjoy!
