Berry Paleo Pancakes

Berry Paleo Pancakes

  • 1 c oat flour 
  • 1 c almond flour 
  • 1 c unsweet almond milk
  • 2 organic eggs 
  • 1 Tbsp sugar or 1 tsp Stevia/Erythritol blend for a natural sweetener
  • 1 tsp salt 
  • 1 ¼ tsp aluminum free baking powder 
  • ¼ tsp vanilla 
  • ¼ tsp cinnamon 
  • 1 cup blueberries (or other berry) 
Combine oat and almond flour, eggs, milk, sugar, salt, baking powder, vanilla and cinnamon. 
Let sit 10 minutes while griddle heats up. Spread oil or butter on griddle. 
Use 1/3 cup measure for each pancake. Makes 6-8. Serve with ½ cup blended berries rather than syrup for an extra dose of antioxidants. Use honey or maple syrup sparingly if you super duper want some type of syrup.
