No Guilt Chocolate Chip and Chia Cookies

200 calories each

½ cup butter or coconut oil
¼ cup HEB Organics Zero calorie sweetener made with Stevia Leaf Extract
1 tsp vanilla
1 egg plus one egg white
1 ½ cups almond flour
1 cup oat flour 
1 tablespoon chia (flax works well too)
1 tsp organic cinnamon 
½ tsp baking soda
¼ tsp salt
1 cup Lilly’s chocolate chips

  1. Preheat oven to 350.
  2. Mix butter, sweetener, vanilla, and 2 tablespoons melted chocolate chips in a large bowl.
  3. Mix in egg and egg white.
  4. Mix in flour, baking soda, cinnamon, chia and salt.
  5. Gradually stir in chocolate chips.
  6. Drop tablespoon sized dough onto parchment paper.
  7. Bake for 12-13 minutes.
  8. Remove from pan and let cool 15-20 minutes.
  9. Once cool gently press with spatula to flatten top. Makes about 12-14 cookies.
