Tressa’s Keto Garlic CRACKERS

Ingredients:

1 cup almond flour

½ cup coconut flour
-
½ cup ground flax
-
1 teaspoon garlic salt

2 teaspoon xantham gum
-
4 tablespoons plus 2 teaspoons olive oil (or coconut oil)

½ cup filtered water (or more as needed)
Directions:

Preheat oven to 400 degrees.

Combine almond, coconut and ground flax flours, garlic salt and xanthan gum in medium bowl and mix well.

Add oil and mix with a fork until crumbly.

Add water to smooth texture and mix with a spoon. Add more flour it dough sticks to spoon.

Gather dough into a ball and place between wax and parchment paper. Make sure the parchment paper is on the bottom.

Roll out the ball into a circle (or square, whichever shape works best for your pan) until it’s 1/8th inch thick.

Place dough onto pan with the parchment paper side down. Remove wax paper. Use a pizza cutter to cut dough into small squares. Use a fork to make prick marks. Sprinkle with additional salt if desired.

Bake for 12-16 minutes. Cool, break apart and then enjoy them with guacamole, chicken salad, tuna salad or hummus.
