Gluten Free Cornbread


Gluten and Dairy-Free Cornbread

It's cold, and soup or chili sounds really good. You may also want a good cornbread to go with it. Here's our family gluten-free version. Enjoy with dairy free butter or coconut oil and a little bit of salt. 




2 cups cornmeal
2/3 cups gluten free flour mix (or 2/3 cups almond flour and 1 tsp xantham gum)
1 Tablespoon plus 1 tsp baking powder
1 tsp salt
1 1/3 cups almond or rice milk
2 eggs
6 tablespoons oil (olive or coconut oil)
1-2 tablespoons sugar

  1. Preheat oven to 450 degrees.
  2. Oil a medium sized casserole pan.
  3. Combine yellow corn meal and other dry ingredients in a medium bowl, stir.
  4. Add milk and eggs, stir.
  5. Add oil and mix thoroughly.
  6. Pour into pan.
  7. Bake 20-30 minutes.
