Lentil and Brown Rice Burritos

Lentil and brown rice burritos- easy crockpot meal

This dinner or lunch idea will be quick (to put into the pot), easy and filling. You can add vegetables into the crock pot during the last 30 minutes if you want to do that, but because of the lentils having good fiber/protein and nutrition, you don’t really have to. The onions, garlic and cumin will add phytonutrients and antioxidants. 


Ingredients

¾ cups dry lentils

½ cup brown rice

3 cups water 

2-3 tsp olive oil

½ tsp garlic powder

½ tsp cumin

Salt and pepper to taste


  • Put all of these in a crock pot for 3-4 hours (first half of the time on high, then stir and turn to low for the rest of the time). Add more water half way through if needed. I had to add about another ½ cup. Keep cooking on low until the rice and beans have soaked up the water.

    • Spice note: you could switch out turmeric for the cumin and make it an Indian type flavor. You could also do about a half a packet of taco seasonings and be done with it. 

  • Spoon ½ cup to a cup of filling into a tortilla or wrap (whole grain or sprouted is best, but I also use the mission gluten free tortillas- delicious)

  • Add salsa and a bit of avocado if desired. Cheese is ok too if you are not trying to eat 100% plant based.

  • This recipe made a large number of burritos when we tried it. Maybe 8-10? We ate on it all week. I estimate one medium burrito to be 400 calories with the tortilla.
