Lentil and Brown Rice Crock Pot burritos

 


Lentil and Brown Rice Burritos- an easy crockpot meal

How about an easy week night dinner that's PLANT based and great for your heart and body. This will be quick (to put into the pot), easy and filling. You can add vegetables into the crock pot during the last 30 minutes if you want to do that, but because of the lentils having good fiber/protein and nutrition, you don’t really have to. The onions, garlic and cumin will add phytonutrients and antioxidants. 


Ingredients:

¾ cups dry lentils

½ cup brown rice or wild rice

3 cups water 

1 tbsp olive oil

½ tsp garlic salt

½ tsp cumin

Salt and pepper to taste


  • Put all of these in a crock pot for 4-5 hours (first half of the time on high, then stir and turn to low for the rest of the time). Add more water half way through if needed. I had to add about another ½ cup. 

    • Spice note: you could switch out turmeric for the cumin and make it an Indian type flavor. You could also do about a half a packet of taco seasonings and be done with it. 

  • Spoon ½ cup to a cup of filling into a tortilla or wrap (whole grain or sprouted is best, but I also use the mission gluten free tortillas- delicious)

  • Add other toppings as desired. For 100% plant based, go with just salsa or maybe a bit of avocado.

  • I’m not sure how many burritos this will make. I’d think it would be at least 4-5, so you could eat 1 for lunch or dinner and freeze or refrigerate the rest.
